Just a guess, but maybe because CM7 is AOSP-based while other roms are Samsung based? I had to do a data-wipe when I tried out CM7 and when I restored the backups Titanium Backup created, most apps worked but some didn't. Adobe Flash is easy to reinstall though, so its a non-issue for me.

switch to launcher pro (free) you can change the dock icons to touchwiz ones if you like the color. my only gripe with it is that the dock buttons are tiny compared to touchwiz. but the interface is overall faster and less-choppy than touchwiz 3.0
