A good stable rom that is 100% better than TouchWiz is cyanogyn mod. It did shut down in December and is not receiving updates any longer but, nevertheless, it is a great stable rom that I use in my Samsung Galaxy s4:) thumbs up if helped

I would suggest you flash TWRP in a different version.

I think your card should be fine as long if you just bought it from the store. If not just exchange it for a knew one(of you can)

The photo should be under pictures or downloads. If she ever screenshots it, it would be under screenshots. If it is on her SD card than go to internal storage than tap SD card (if she had one) and than it should be there. Thumbs up if it helped!

Easy to factory reset. I don't have an answer to your other question but to factory reset it simply follow my screen shots. They might be a little different from the TouchWiz settings because I have cyanogyn mod but it should be pretty similar. Don't forget to thumbs this up if it helped!:)

There is no harm in downgrading to my knowledge.

OctOS is the only thing u can think of that works fine with Android 7.1 as far as leaving TouchWiz. But, like pwyncorn said, this is sort of the wrong place to ask. OctOS is great instead of TouchWiz and if you want ROMs with TouchWiz prerooted firmware is the way to go. Thumbs this up if helped :)

You can still flash cyanogyn mod(with the links that @ Mavrikmeercat gave) it won't be getting any updates though which stinks. Other than that though, the mod still is available. Sad that cyanogyn has shut down:(
