I like the GingerKeyboard from Creed's ROM. Don't know where Mr. Creed got it from, but I like it...

Swiftkey X if you like press the buttons.
Swype, if you like make quick msg and agility on keyboard.

My opinion.
For me, the best keyboard is stock keyboard. It is the best for writing in portrait mode.

I have always used smart keyboard pro, as it's the easiest to type on. I also do like the built in swype that came with the phone though ;-)

I modded my SmartKeyboard to look like this:
Made the layout so each thumb will have 3 columns each.
Then I moved on to Ultra Keyboard but I modded it a bit and swapped the period key and the space key:

Also very active in Facebook and if you find any bugs or have any suggestions, then he is all ears.

I use A.I Type. The WP7 theme is the closest you can get to the WP7 keyboard. Ive resized it and added my own dark coloured background and darkened the keys a bit. Looks pretty awesome.
