You need to update recovery. I'd say the best bet is twrp 220.127.116.11. Though I haven't flashed my s2 in awhile....maybe a newer version is better? Last I checked 18.104.22.168 was best.
Then the newer ROMs should flash fine.
Make sure to follow the ROM flash instructions to the letter.
I'd say nandroid first....but you'd have to flash twrp first, then do it. But I'd have Odin and a stock 4.1.2 image ready just in case. In fact....I'd Odin 4.1.2 first. Then flash twrp and root. Nandroid backup after. Then flash ROMs.
Read up good though....I'm not there, so I don't warranty this advice. Lol.
