can you remove certain applications from mods?

before i flash @tamirda mod i want to remove some apps like air wake up , s-voice , baby monitor ......
how can i do that from the zip file ?( remove apks and their lib and framework and all)
if its not possible how can i get my ancient s-voice and air wake up back after flashing the mod?

Simply and the safer metod is freeze it

You can use Titanium backup Pro, Link2SD, etc

ok i kinda know this techniques but how do i get my old apps back .... with their lib files and all
