Yes you should always flash the Gapps immediately after flashing the ROM, during the same recovery session. Do not reboot between.
Since you did not do that you may want to reflash the ROM and then flash Gapps, again in the same recovery session.
The only thing that has changed in the latest GAPPs 20120429 is:

With the amount of people still forgetting to flash gapps (or, more accurately, forgetting to read the instructions), I'd suggest having a check built in the ROM - if gapps aren't found, then display a warning once booted. Just checking for the presence of a gapp apk like the Market one would be safe enough IMHO. That would save a few round-trips to these forums.
It's enabled by default. Plug in your hdmi cable and give it a whirl.

I think it will, or something like it. It (true multitasking) seems like the future of Android, and our EOS developers will make sure it works for the Xoom. I think the version we had in build #67 almost worked...we're just about there.
