Kernel flashing via recovery, radios and returning to stock with out relocking. S-off also allows you to change the htc splash screen.

I really don't understand why people equate soff to suddenly getting aosp
You don't need soff for aosp, nor does it in anyway help aosp development on a phone
Soff is great, but not for any reasons related to aosp roms1565lol.. that's all I've ever called him.. Ah well.. hopefully he isn't conflicted now and thinks his name is in fact Justin if it's not..
i usually just call him jcase
