No you just have to sideload the los zip and afterwards the gapps zip, that's itWhen updating to 19.1, do I need to reset the system or cache partition before flashing the new package and gapps? It is not mentioned in the tutorial so I would expect not.
I guess the new package might just completely override the old system partition, but why then does flashing the gapps not completely override the new package?
Am I supposed to flash the same GApps package as I flashed on 18.1 (I think MindTheGApps) or can I flash whatever GApps package I like (e.g. NikGApps Core) on upgrading official 18.1 to official 19.1?
I think you can but I'm not 100% sure, I had Open GApps with LOS 18 and dirty flashed LOS 19.1 with MindTheGApps without a problem.
Successfully upgraded with TWRP 3.6.1, Reinstalled Magisk and patched boot.img, SafetyNet passes
Most likely on our 5T unless anything has changed with Magisk recently.
