VoLTE menu is enabled by default in SEA firmware.
But with other country firmware

There is no VoLTE menu

I can't comment on the Xperia 1 Mk3 or Xperia 5 Mk3 but by flashing SEA firmware volte works on Vodafone Australia. I don't know anyone who has had success with the Xperia Mk3.I'm tempted to get a Xperia 1 iii or Xperia 5 iii if VoLTE works.

Yes MVNO works.I have it working but with a much simpler method: flashing SEA firmware. Works on an Optus MVNO for me, reported to work well with Telstra as well
