I just bought the Samsung Galaxy Tab S2 9.7 T810 and installed the NZ rom and it's running great so far. Install TWRP with ODIN and backup my original rom and install the NZ rom with ODIN and reinstall TWRP back on it and rooted it in TWRP recovery. ODIN just makes everything so damn easy. Did not need to install the Samsung USB drivers on Windows 10. The only thing I see missing is "Eastern Standard TIme" but I just use "New York" and that pretty much turn it to "Eastern Daylight Time".
I loaded up the NZ version as well and its like a new tablet. Very smooth and battery life is much better.

Hey I noticed on Sam mobile that there are several marshmallow ROMs, is the German one the best ? And does flashing via odin trip Knox?

Very nice, TWRP, Root and Exposed are working flawlessly.

TWRP: http://forum.xda-developers.com/tab-s2/development/recovery-twrp-2-8-7-x-lollipop-5-1-1-t3205686
Root: http://forum.xda-developers.com/apps/supersu/2014-09-02-supersu-v2-05-t2868133
Exposed: http://forum.xda-developers.com/xposed/unofficial-xposed-samsung-lollipop-t3180960

Here is my debloat script, previously developed for the Galaxy S7 edge, but also working on our Tablet :)
Just flash it over TWRP and it will remove a lot of bloatware of the device.
I cannot get root. I odin'd the Austrailian version, only because it was the only one I could find a fast mirror for. Then odin'd TWRP 3.02-1 (latest). Then flashed latest Supersu by Chainfire. But still no root. ES File explorer can't get root, and most importantly Multi Window Manager for Xposed can't get root.

Anybody else have this problem? Maybe I need to odin the German version, but then I'll lose 5Ghz wifi.

Maybe you could try it with the permissive kernel?

Thanks... I'll give that a try. I repeated the whole procedure on the 6.01 AUS version last night. Found the same thing ES File Explorer couldn't get root and MW Manager couldn't get root. But then I found that Wanam Exposed got root and worked, it allows adding all apps to multi window and popup view. So that's working for me now.

6.0.1 in Chicago

Just got 6.0.1 OTA update on my SM-T810 Tab S2 wifi-only 9.7" 64gb today, near Chicago, Illinois, USA. Download was about a gig. Will report any issues as they arise.

Hmmm... I checked this AM and nothing yet... Anyone know if there is a download site? I don't see it on sammobile yet
I just ODIN'd the NZ version on my US WiFi tab s2 last night. Will it detect the US version and download the OTA or am I going to have to wait for an ODIN firmware is uploaded to sammobile in order to see it properly?
