In update to my last post, I stumbled onto some more details, including a workaround. These lead me to believe that this behavior is related to the 'proximity sensor' (as it's called in phone settings) that turns off the screen while you're on a call and holding the phone to your face.
The disappearance seems to be triggered as my finger approaches the screen (<1cm away), rather than the actual touch itself. With a bit of experimenting, I uncovered the following details:

- The various apps I tested (Nova, touchwiz, calculator) do not register a touch at the distance that triggers the keypad disappearance
- (in dialer/phone) a quick jab will trigger a keypress without causing the keypad to disappear
- Behavior only occurs while a call is active. I can dial a phone number without problem, but once the call connects, this behavior occurs
