The link you provided was interesting, but the Xiaomi MIUI firmware is quite different from the Samsung OneUI that is the basis of the article. I had no issue uninstalling all of the stock apps and replacing them with Google or other non-Xiaomi apps. Unlock the bootloader, root with Magisk, and use ADB commands or a simple Windows application like "ADB App Control" to debloat and uninstall any stock apps you want.
