This method doesn't install cwm though right? It was on there until I used this method to remove the ! Gt-i9100 from the boot screen. Its now gone. Sorry, in advanced I'm new to the Droid community coming from iPhone 4 jb this is all new stuffNote that if you're already on stock, method 2 won't touch your data partition (settings, apps, etc.). So if you're using it to root from stock, you will keep your settings and such.
If you are using it to recover a hosed-up phone due to flashing the wrong thing or mangling your system partition, you may need to wipe data/factory reset in recovery depending on what you were running before.
Rooting alone does not fix WiFi tethering. You need to use Titanium Backup to freeze TetheringManager2.apk or outright remove it in Root Explorer or an ADB shell.Sweet, doing now.

Pull the battery out of your phone to ensure it is completely off. Now hold down the Volume Up and Down buttons then hit the Power Button. Once you see the Galaxy S2 screen release the power button and Volume buttons.
Nothing comes up once I hold volume up + down n then power.

I know this might sound stupid- I have the zip files on my PC for Cognition X2 and CyanogenMod 7. How do I install them on my phone.
Also for CyanogenMod 7, it says I should "WIPE (wipe data/factory reset + wipe cache partition)" Doing so- will it erase all my apps, contacts etc? If yes, how would I get them back.

Uhm, go install Titanium Backup, and instead of hitting backup, in the batch menu hit restore apps. (DON'T hit restore all, that will mess up your ROM since you're on a different ROM than you backed up on...assuming you backed up using Cognition)
