Okay, I looked for apps called Hidden Settings on the Play Store and I installed the
following.
I could access developer options with this and changed smallest width.
The default value was 600 dpi (my Atoto S8 is the 7'' Gen 2 Standard) and I tested with lower dpi values. The most stable values were above 540dpi. The apps would get slightly bigger so it would be easier to target them with the finger,
however the status bar would disappear if the unit restarted rendering the system unusable.
In the end, I had to reset to the default dpi of 600.
Even with the Hidden Settings app, there's no option to increase font size in Settings -> Display or in Accessibility. I assume Atoto just included the bare minimum options that they actually tested and optimized and that they're lazy to even expose an option to increase font size which is a shame.
It was a nice exploration to do though. I encourage others to play with it, but I don't believe anyone will get better results without rooting and alternative firmwares but that's a road I'm not willing to take.
