So I turned off automatic updates after I unlocked my Verizon Pixel XL bootloader. Couldn't remember if I had the option before the unlock. Is this what I think it is? Or does it just apply to the new seamless update thingy? I want to keep the bootloader unlocked for future use.

Just applies to seamless update. Just keep that off and you'll be good.
