Snap camera:
size 4mb JPEG Quality (superfine default)
Big size JPEG Quality (best and enable sarpness).

EDIT
Boys record video 720p with 120fps .Go to video settings and set :
Video Quality 720p
Video codec MPEG4
Use HFR Frame rate " V "

In the meanwhile.. have you discovered a way to record 1080p with 120fps?
I tried many different settings with no results. Anyway, recording in 120fps is amazing! thanks!

edit: referring to Snapcamera, what about enabling api camera 2? does it improve camera quality or is useless?
Also, is there a way to keep HDR enabled without waiting so long time when taking a picture? Like camera stock/google cams do?

Yes for faster Hdr photos:
Go from P1 program-mode to Hdr-mode.Stay here.
Go to menu-Hdr and set: "Time between shots from 800ms(default) to 100ms.
You are Ok.

If you wand more settings for Hdr set:
Review Hdr Shots 'V
Keep Hdr Exposures 'V
Focus between shots'V

Dont set camera2 api .

Anyone have any better luck with the Google Camera portrait mode? As a parent it is nice to have the blur in the photos so when you are sharing pictures of your kids you are not sharing pictures of other people's kids when they are playing at the park or something.

Tried several versions. My phone reboots everytime I take a picture.
