There are custom roms like CM11, CM12, and Mokee rom, although there are certain bugs. These roms are available on HTCMania, but you'll need to use Chrome browser to translate from Spanish, if you don't speak the language.
The only way to remove EMUI is by flashing a custom ROM. There's no way to remove it from the current ROM, even with root access (well it may be possible, but no one has done it yet).
