In installed apps there is a defaults button. You can set...
Launcher
Dial
Messaging
Browser
Camera
Gallery
Music
Email
Video

No option to change the app store sadly. Think we'll need a global rom to remove the Chinese one and have Google play installed. I think if you root and then freeze the Chinese app store it has the same affect.
But removing the Chinese app store atm sends the phone into a boot loop.

I tested freezing the default app store with root permissions and I got bootloops as well.

So my advice is you live the app store alone. And wait for global ROM ?

I didn't experience bootloop when I froze the Chinese app store. I'm on stock ROM, rooted with King root and froze it without a problem. I was annoyed because Chinese app store opened up when I clicked on Google Play store links.

Are you using MIUI 77.1.1.0(LHPCNCK) ?
Which app did you froze ?
I was on stock 7.1.1.0 and rooted it. Then I installed AppFreezer and froze app called App Store with orange Mi logo. After restart, phone asked me which app to use when I clicked on Google Playstore link.

I also rooted but I don't know if I'm using stock rom, do you know how to get this info ?
Did you freeze also other bloatware such as Mi Wallet, Mi Cloud, Mi Video... ?

No. I uninstalled apps that could be uninstalled. Others that I can't uninstall I didn't freeze. I just disabled them to autostart.

When i received my Redmi 3, the webshop already flashed a multilanguage rom and installed playstore for me.
MIUI version would show this : MIUI 77.! Stable 77.1.1.0 (LHPCNCK)
Its not stock.

With titanium i did freeze alot of Mi apps. No problems.
