Customize the device

Hi everyone,
I have a few questions, hope you can help:

I would like to create a shelf page like Oneplus', it's the never ending page where you can place all the widget you want. Is it possible to do it without a launcher?

I would like to see more app inside the folders, the screen is large so why not use it?

I bought a brand device not knowing that this imply the the phone is mono sim. Since it's just a firmware matter, I would like to flash a non-brand firmware. Can you help me?

Just use a launcher like Nova launcher
