You can also try to find an older M7 charger, but there's nothing wrong with using the QC3 charger all the time. When I first got my 10, I used my old M7 charger thinking it would somehow preserve my battery, but I started just using the QC3 and it's been fine after a year.

Why would he want it disabled
I imagine to increase battery longevity. You could disable the quick charge on the S7 and S8 to avoid the increased heat when charging the phone. I typically charge at night time so it would actually be ideal to let me charge the phone slower using a switch, rather than having to switch cables or chargers.

My U11 will qc3.0 charge from 1% to 100% in 1.5 hours. It will fast charge up-to a certain point then drop the charge rate once it hits about 80%

Using the official charger is your best bet, but if using, 3rd party chargers such as another qc2.0 certified you will be fine as it will only deliver a Max 5V.
