Did you try to flash Android 11 with Odin ?
If not download the last standard "Odin3 v3.14.1" here.
Download your Android 11 firmware and decompress it.
You should get 4 files : 1 starting name with "AP", 1 starting with "BL", 1 starting with "HOME_CSC" and 1 starting with "CSC_"
Boot your tablet in download mode (from off, volume up and down at same time and plug usb cable connected on your computer) wait the blue screen to appear, then one time volume up to enter download mode.
Open Odin with admin rights and select the square for "BL" then click on "BL" and choose the file starting with "BL" from your firmware. Repeat the process for "AP" and "CSC" (for CSC choose the file starting with "CSC_" to factory reset the tablet at the same time).
Check that only the options "Auto reboot" and "F. Reset time" are checked.
Click on start and wait the flashing process end with a green pass square.
Your tablet will auto reboot and you can close Odin.

Use Frija tool to download your firmware.
You can use "HOME_CSC" to keep your data but with chances to get bugs since you downgrading your firmware.
If you want to avoid the maximum of bugs you need to have TWRP recovery and format "cache" and "dalvik-cache".
If you don't have TWRP you need to be rooted to delete files present in those directories "root/data/dalvik-cache/arm/" and "root/data/dalvik-cache/arm64" and delete "cache" from stock recovery.
The best will be to backup your tablet with "Samsung Smart Switch" and when you flash to use "CSC_" to do a factory reset. A factory reset is always recommanded when you upgrade or downgrade a major android version.
A factory reset will wipe the partition "cache", "data" partition. "Dalvik-cache" will be deleted too since it is on the "data" partition.

Yes you have to find a website to download the firmware.
I tested with manual settings in "Frija" it's not working. You can get only the oldest android 12 version.

You can find all historical firmwares changlog and version here. The last android 11 (XSA) is P610XXU2DUL9.
Thanks so much. I have P610XXU2DUL9 and will try today.
Question if i downgrade and then choose to upgrade later i can just get the new software and do it the same way yes?
