Downgrade

There are a few questions I would like to ask:

•downgrade : Currently xiaomi.eu 12.5.5.0 And want to go back to global 12.0.11.0, can it be flashed via ofox?

•root : can I root miui 12.0.11.0?
•Is there a file that replaces poco launcher with miui launcher
