First time noob looking to format my M8

Hi Guys

So this is the first time I'm on here and need advise on how and where to start. I have a HTC One M8 and what I'm trying to do is the following:

- Re-install the OS as it's starting to have some weird performance issues.
- Install some sort of custom ROM if needed to get rid of the built in HTC apps that I dont need. (HTC Sense; Facebook/twitter apps; etc)
- Make a backup incase I brick this phone and need to revive it

Also, if someone can explain the benefits of Rooting my phone. I get the basic concept of administrative access to install and edit stuff, but could you give me an example of how to use this? Or maybe how you have used the root function for yourself.
I do IT as my job so I get most of the basic stuff but would like to start using my phone a bit more than the casual user.

Man my best advice is hit the general section and read read read then when you've done that read some more, there is so much you can do with root it would take all day to give you a good answer mate
