My Rooted Android was Pick Pocketed

Hi,
Recently my rooted android was pick pocketed at a crowded market. I had redwolf recovery (no password) on my phone and USB debugging was turned off in developer options. Also i had a pin lock at boot, along with screen lock. I believe i had my phone encrypted by default (Oreo 8.1) as internal storage was unmountable. I'm curious about the risk to my personal data on my phone; Will it be accessible to the thief if he attempts for unauthorized access?? can he bypass the boot lock screen because my phone is rooted?? or will he have to factory reset/wipe all the data?
Also, i have requested for "erase all data" via 'find my phone' already (but i don't think it will come down to that).
Not as sorry about loosing my phone as much as i am worried about unwanted access. please share your thoughts.
Thanks in advance.

Not Solved!

I'm using Moto g6, twrp 3.3.0.2_ali and I have already installed magisk but the tick in data encryption is already there... And it's encrypted. Don't know how to deal with it... I can't always format data...!?*♂:crying:

Same as you...
Xiaomi mi mix, latest recovery.
Digitizer isn't working with any recovery where digitizer is fully working... (on working mix <yea, I have two> recovery is fine).
I have issue with this data encryption.
I can't install any update, any zip with twrp because of encryption.
Phone is working well, I can boot system, I have autority to the files.
Soft is sometimes buggy on this phone so I want to update this system...
I tried this tut, (Yeap, I have done it without touch, just multiple key reboots)
I have installed magisk v17.1. Phone tried to get boot almost 10 minuts -.- ( I know that it is too long, but he booted successfully so nvm).
After reboot, in twrp I still haven't access to the files (there are no password promt anymore!...)
I will try to install the apdate (with this multiple reboots to copy files).
See ya!

Help :(

EDIT: I tried old modded twrp for mix (from days when there were no official one to install oreo).
You have to flash this twrp: https://mega.nz/#F!8wUghQjB!YoPVbaIAm0NXZk9XDDLHDw (I don't remember the source)
You will no more have encrypted storage(or if, wipe data),
For me, digitizer still wan't working. I flashed 9.6.20 ROM, then booted to recovery again. Digitizer was working well, storage too.
After that I have flashed 9.6.27 and is fine too.
Greetings.

Hello, if you cannot wipe data due to encryption, go to change file system, select Data and change it to ext4. I think it did a total format and removed the encryption problems.

Can you help me i want to disable storage encryption in moto g5s plus(android oreo), i have flashed twrp and then format data and sideloaded magisk.zip and disable dm verity and forced encryption zip in internal storage and flashed it but still when i go to settings in stock rom i see encrypted and whenever i boot to twrp it asks for password. My device is rooted but only thing i want from decrypting is backing up efs and persist through twrp so that i can flash it in custom rom because im not getting signal and imei in custom rom
