back-tap action works for me fine. Camera Assistant is not supported on our phone when you open it shows pop up
Yes I tried it again and it works but needs to tap hard on the back of the phone, i tried it on another phone (A33) it works great just with light tapes.
And the Camera Assistant works on the S21 ULTRA exynos version but not work on the snapdragon version yet

Yes, it is unavailable for SM-G9980 as of now. As far as I know, Samsung will release support for Jio5G in January or February SW update.

I have reasons to believe it has to do with Jio and not the phone. I've had 5G issues with my phone being with Vodafone and it's been fixed.
Jio says contact OEM, Samsung India cs says contact HK cs, HK cs says contact local Samsung cs, all are just passing ball... As my jio sim immediately connecting to 5G network whenever I'm inserting it into any other 5G device, but not in SM-G9980 and it's not most important thing for me to get jio5G, as AirTel-5G just working fine, m fed-up with Samsung for many other reasons, like region wise software updates. It's just my personal opinion, so far m enjoying this device, but m damn sure my next device won't be Samsung. Btw thanks for your suggestion.
Voda surely using NSA network which is just working fine, issues with SA. My official corporate number is Voda and till now Mumbai doesn't have Voda5G network.

Hey there, I definitely understand the frustration. The phone should just work right out of the box without any issues considering how expensive it is.

Have you had a look at the option under
Settings > Developer Options > 5G Network Mode

Seems to me that there is a toggle for NSA/SA/NSA+SA
