Minimal Apex Theme looks great. I've been using these and haven't felt the need to change them out for months now.

Maybe I'm weird, but I think all the colorful icons on the home screens make it look tacky haha

Yet another vote for NOX or STARK. Kovdev's sets are the most complete I've ever found, and he updates frequently.
