help installing custom rom and gapps

Ive rooted my sprint LG G3, I had to revert it back to KitKat to get it done. I'm wanting to install a ROM but unsure which one is safe to install since I went back to KitKat or does it matter ? I'm also wanting to know which gapps I should install with it ?

IF I let my phone upgrade to lollipop again I will lose my root access correct ?
