Is there a way for me to install the stock apps on a custom rom?
Unfortunately, no. The most useful Moto apps only work w/stock Moto ROMs. Which work great BTW - especially when enhanced with Magisk mods and/or Xposed Framework. The only downside is dealing with OTA updates and the lack of robust theming support.

Yeah that is unfortunate. The only things I don't like about the stock rom is the bloat, and like you said, lack of theme support.

Bloat is almost certainly carrier related and removable with root. I have the XT1768 (unlocked/carrierless) variant and found very little in the way of 'bloat'.

Most carrier builds do. But unlike the unrootable/unlockable Verizon XT1767 you can easily cleanse your device yielding a close AOSP experience that is fully functional. A quick read through most of the custom ROM threads will yield various issues that range from minor annoyances (most) to significant gaps.

So get rid of it. Much of lies in the oem partition. But only edit oem while booted into twrp or the phone will freeze. Start by adding a ~ to the end of a file or APK you want to get rid of to test stability. If no ill effects, then delete it (or move somewhere for safe keeping). Anything can be brought back with the stock firmware package though.

...or just disable/freeze unwanted items and mitigate most of the risk of renaming/removing. Especially if it lives in the system/oem partition which is largely inaccessible/unusable in day-to-day operations. Yes - one can move stuff around and marginally increase space in the somewhat cramped user/data partition. Not worth the headache IMHO unless you are very comfortable with the procedures.

Yeah I'll just disable them. Are there any major incentives to go back to the stock rom, especially now that the LTE is pretty much fixed for custom roms?

Not so sure about LTE being "fixed". As for incentives:
- if the ROM you are using now works stick with it; if it ain't broke don't f#%k with it
- already addressed arguments for stock (here); I like stuff that works and minimizes upfront work; my goal is to USE my device, not MANAGE it
