What would be very helpful is if you could give us an idea of what each element in that list does (is responsible for), because I'm sure some of us need some of the functionality of a few of the elements in that list.
This way we'd be able to freeze ONLY what we personally don't need

I'll be honest, though I'm compiling this list, I've been wondering the same thing. I was hoping Cellzealot would be able to help, but I'm not sure where he is right now.
I'll say, though, that the added descriptions would be ideal when it comes to a (more or less) complete list. I definitely agree that it'd let people trim off what they don't need while letting them keep things they might find useful (something that they might find useful/cool about Motoblur, for example).
I will keep this in mind and keep an eye out for any material or any members that could help us in this demystification endeavor.

I will remind those looking at my lists that my goal is to get as close to Vanilla Android as possible. So I may be more aggressive than anyone in getting items turned off. For my two cents I would prefer none of the blur items be running on the phone

And as I've always said, snlu178, Vanilla is my goal, too. So, I'm glad to see somebody as...zealous? vigilant? Well, I'm just glad we're aiming for the same thing. Thanks for the additional frozen goods, and keep up the good work.
Also DO NOT touch Email Engine 2.2.1 unless you want to shut off text, email and calendar.
Another item of note:
I shut off Motorola Services. So far no issues from my quest to eliminate MotoBlur. It turns off MotoBlur in accounts. So nice.
I also installed the compiled email.apk that was based on gingerbread and froze the email app. This gives me Vanilla Email Exchange sync. Much better sans Blur.
