I found out that when disabling MIUI optimization, the Always on Display stays permanently on after locking the screen (as it is on most phones)

To do this you have to:
-Go to Developer Options
-Scroll to the bottom
-Tap four times on "Reset to default values", this will not reset any configuration you have set, it will only reveal a toggle button for MIUI optimization (apparently that's how Xiaomi decided to hide it)
-Turn off MIUI optimization

by now I don't have very clear what are the pros or cons of disabling MIUI optimization, on my phone it didn't break any functionality, only changes I've noticed are the AOD, and the App Info screen now looks like the one on stock Android

    disable MIUI optimizations can be result in various bugs. i personally dont recommended this.
