How can I keep the Galaxy theme store icons instead of Nova icons.

How can I keep the Galaxy theme store icons instead of Nova icons.

Unfortunately you cannot unless Nova has an option for "default," which I don't think it has. I can only get them to stick when using the Google Now launcher. I use xposed to tweak it.

Icons

Search the theme developers name in the play store. Some of the time they release just the icon pack there just for this reason.
