Just checked my SafeStrap app... I've already got 3.72. That's what I tried in my detailed post above.
You think I should try uninstalling and re-installing?

Rooted AT&T Note 3 , 4.4.4
Uninstall that one and reboot then reinstall 3.75 (make sure to uninstall recovery from within the app first).

from my note 3

If we are on NC2 (100% stock, rooted) should we use SS 3.72 or 3.75?
Either one is fine. But NOT 3.71

I tried this...
1 Uninstall Recovery in SafeStrap.
2 Uninstall SafeStrap (3.72) in App Manager
3 Reboot
4 Install SS 3.75
5 In SafeStrap (3.75), I install recovery.
6 When I "Boot to Recovery" in SS3.75, I get stuck on the initial Galaxy Note 3 Boot Screen... It just sits there.

Have a missed something? How long should that screen be up before this works?

I checked and verified everything. My BusyBox, for some reason, was NOT installed. I installed it and verified that it stayed that way.
I uninstalled the Recovery in SS3.75 and then reinstalled the Recovery.
I tried to Boot to recovery (in SS3.75), and it simply did a normal reboot.... With the Samsung Swish and AT&T Splash screen and all...

Any advice?

SS is not yet compatible and may never be compatible with Android 4.4.4 (NJ5).

That is news to me!!
Are there any other recovery options for our AT&T Note 3s with Rooted 4.4.4??
No, you really should've read this thread from beginning to end and then you would've known this. I mean, this update JUST came out and hash isn't even supporting SS anymore. I don't even remember how many weeks or months it was before he was able to release an update for 4.4.2 due to all the changes in the OS. I'm sorry you blindly jumped ship but at least you can always go back to NC2 where everything is already established and fully supported. Best of luck!

You Need To;
Install safe strap
Place the keep root file onto the root of your extsd
Reboot into safe strap recovery
Install the keep root file
Then boot into download mode
Hook your phone up to a computer running Odin 3.09 or 3.10
Flash the kernel in the AP slot of Odin
Reboot
Give the device about 5 minutes to update and settle in
Enjoy

Can confirm this method works for me :good:

Alternative Custom ROM Method:

Here they are: (If you don't know the difference between each ROM please use the search function!)
N900A_NJ5_100%_Stock_Rooted_ROM.zip
N900A_NJ5_Stock_Deodexed_Rooted_ROM.zip

1. Use Safestrap's "Backup" function to backup your User Data.
2. Place the ROM onto your ext-sdcard.
3. Reboot into Safestrap recovery then perform an "Advanced Wipe" and wipe everything but your ext-sdcard.
4. Flash the ROM using the "Stock Slot."
5. Once complete press "Home" then "Restore" and restore User Data.
6. Next press "Reboot" and reboot into "Download Mode."
7. Flash theN900A_NJ5_Stock_Kernel.tar.md5 in Odin's PDA slot(AP in Odin v3.09+). Done!

Thanks to @carl1961 for sharing his nandroid backups used to create the ROM's!

Notes:
1. This Custom ROM process will update your Modem, Non-hlos, System, Kernel, Stock Recovery, and Bootloader to NJ5.
2. Follow all of the above steps in the order provided and do not skip any steps or you may experience issues with your device!
3. Safestrap will not function after updating to NJ5 4.4.4
I used the alternative custom rom method, with the deodexed, rooted ROM, and now my phone won't charge on the wireless charger I've been using since I got the phone.

Any ideas as to whether it is a 4.4.4 thing or something specific to the rom?

Last time i had that problem personally was when i soft bricked my device. Can you at least boot into the phone? If so it may be ROM related. If not then the system did not install and therefore it is tied into the charge because it needs the system to recognize that the phone is being connected. Otherwise it will sit and have a battery icon that will never move

.All I care about now is root. Hotspot call recording etc etc.I uninstalled all but S's and root.ready to update. Have Odin 3.09 the tar kernel file on pic ready to rock. Md5 sum
All match
I did a backup in S's have kept root zip on sd card .so at this point lm going to.
1 go into safe strap and install keep root ota in Stock slot.once complete
2 reboot download recovery and flash kernel in ap slot in odin
Let complete and reboot correct

This method uses a modified version of the official NJ5 OTA to update and "Keep Root." The file is flashed in Safestrap and the end result is a 100% Stock, Rooted, NJ5 Device. However you must be 100% Stock NC2 (except for root and Safestrap) before proceeding.

**You can Odin back to NC2 after taking the NJ5 update if you decide to do so**

1. Place the N900A_NC2-NJ5-KeepRoot_OTA.zip in the root of your ext sdcard.
2. Boot into Safestrap recovery but Do Not Wipe!
3. Flash the N900A_NC2-NJ5-KeepRoot_OTA.zip in the "Stock Slot." Once flashing is complete press "Home" and reboot into "Download Mode".
4. Last, flash the N900A_NJ5_Stock_Kernel in Odin's PDA slot(AP in Odin v3.09+).

Once complete the phone will reboot then "optimize apps" before completely rebooting. Done!

Notes:
1. Neither User Data nor your Knox Warranty Flag will be affected using this method.
2. Should the update fail consider flashing back to factory stock NC2 using the files in the following thread then rooting and installing Safestrap: http://forum.xda-developers.com/note-3-att/general/n900aucucnc2-odin-files-t2838117

Known Issues:
1. Safestrap will not function after updating to NJ5 4.4.4.

Alternative Custom ROM Method:

Here they are: (If you don't know the difference between each ROM please use the search function!)
N900A_NJ5_100%_Stock_Rooted_ROM.zip
N900A_NJ5_Stock_Deodexed_Rooted_ROM.zip
