I want to know if i can root my device. I saw some guides on the internet but they seem questionable and i dont want to end up with a dead brick as this is my only phone for now.

IMO no one can guarantee that the phone will not get bricked when you try to root it. :)

It's always a trial-and-error operation.

But they give an oem unlock option to unlock the bootloader isnt that fishy
The problem is that there is no official way to unlock Vivo phones though there is a method in which you patch the boot.img with magisk and flash it via sp flash tool which will root the device but I never found a rom compatible with sp flash tool for my vivo y91c. So my conclusion is don't play with your device and if you really want to play with your device then exchange your vivo phone with a Xiaomi phone or any other brand which allows you to unlock the bootloader.
