Honestly if you are worried about using Google Pay it will probably still work. There are several different things SafetyNet checks on and some of them can be falsely triggered.
I haven't had Google Pay (the in-store payments function) work on any Android build that didn't show up in the Play Store as being certified. That's nothing to do with Huawei--it's Google Policy that applies to all Android phones including their own Pixel devices.
The latest certified build for this phone is 206.
The only way to get Google Pay to work on uncertified ROMs is to be rooted and use Magisk.
I have no idea why people keep saying Google Pay works on all these builds that don't pass safety net because it doesn't. Google Pay will still work for app purchases made on a phone but the NFC function at store registers will not work on an uncertified ROM without root and Magisk and even a ROM certified by Google will show up as uncertified in the Play Store if the device doesn't completely pass safety net because safety net check is used to determine if the device has been altered-- for example an unlocked bootloader always triggers a safety net fail and Google Pay will not work for in store purchases.
Whether banking apps still work is completely separate and depends on what security standards the app requires.
My Chase and Paypal apps always work on certified, uncertified, stable and beta ROMs because they have lower security requirements than Google Pay.
