Updates:
More annoyances are,
No swipe from delete button to delete a word easily (gboard as well)
Can't know if notifications are there or not without swiping down or looking at the app panes for badges
Can't get otps to pop up on keyboard app at times and no support for that at all on gboard
When connected to a car, music won't auto play on YouTube music
No pip in duo
But now I am almost settled and somewhat am a "power user"!
Systemwide AdBlock enabled
Double tap backside for locking screen
Automation for playing music when connected to my car (eventhough at times it doesn't work with YouTube music) and turning on low power mode to disable aod
Disabling of AOD at night using automation
Changing ringtones to custom eventhough it is 30sec long
But now I would like to say, I really don't feel much difference between android and ios personally because as it turns out I don't use most of androids features like multiwindow and stuff. But to people who use it, this will definitely be a downgrade! In my opinion, I will definitely go back to android or can even continue on iOS without any issue as I don't feel using one will force to you continue using that itself unless you invest in the eco system. My suggestion to everyone is, buy "ecosystem" products like earphones, tablets etc which can be used with any platform and not just one! My ecosystem is as below,
iPhone/Android
Yoga 6 (tab and laptop)
Buds pro (will upgrade to Sony XM4 or XM5 or Bose 700)
A good Swiss or japanese watch for people who actually don't have needs of a smartwatch (used galaxy watch active 2 and watch 4 since launch, didn't use any of the features or even replied using the watch to anyone)
But imo, iphone Pro line will definitely have a better resale value than any android and is a better investment.
How is the performance and battery life on iPhone as compared to S21U?

Performance is good, no stuttering in the UI at all. Everything opens up fast and app installations are just amazing! Everything is done within 5secs. No downloading and then waiting for few more seconds for it to install. I don't know much about battery life because I have been charging mine from 40% to 80% to save the battery health (in case I have to sell it immediately). But 1 day I charged my phone early morning at around 7 and then used the phone the entire day, lots of calls, 1 episode of farzi, maps, uber & ola etc with BT and WiFi on completely but not connected to anything and sometime in aeroplane mode because was flying as well. At 9pm had close to 40% battery. Which I could never manage in my S21U as the idle battery drain was very high! This just stays as it is with maybe 1 to 3% going down in 7 to 8 hrs! Charging is also fast, I don't have much problem. Charging as fast or even faster than S21U with Samsung 25W charger. Daily because of this 40% charging, I at times needs to charge twice because I see a lot of videos using the inbuilt speaker but on WiFi.
To be really honest, there isn't much difference between android and iOS or I haven't used all the features of android but they were nice to have. But I will definitely go back to android next year with the S24U or Fold 5.

I have just told myself that minor stutters are a feature of android. I like the iPhone because of performace and battery life. But some of the features of android stop me from switching over. They are mentioned in this video

I'm really interested to jump ship and switch to iPhone 15 Pro(not Pro max, S21U is a fairly big phone. I find 6.1" to be the perfect size).

Let me know your thoughts on the video.

I agree to everything he says in this video and you will really need to get used to it! You can't even mark WhatsApp chats as read from notification centre! That's the biggest annoyance for me. Yes Gboard is sucky at times, it doesn't let you swipe from delete button to delete last few words. Call logs not saving more than 100 contacts is driving me crazy as I got an interview call the other day and I can't find that person's number to ask them to go ahead with it! Back thing he says is an annoyance but doesn't bother me that much. No clipboard is a pain as Samsung has that edge panel for that and is so convenient! I don't do call recording so no inputs, same with call coming in. It's not that big of a deal. PIP is there in WhatsApp now but not on Duo which I use the most. Face ID doesn't need you to look at it, it always senses and I never felt oh I wish the finger print was there!
There are plus and minus in this transition. Don't think too much, buy it, use it, if you don't like it sell it and get an Android as iphones have more resale value than any android out there and will retain its value for a longer time, especially the Pro variants!

Thanks for a detailed answer. Maybe I will buy the 15 Pro in September. 🤞
