...between Goo Manager and Rom Manager when updating ROMs?

I guess the question is, does it make any difference which recovery you use when initializing a ROM flash?

I really like Goo Manager's simplicity, though I know it's in beta and might have some flaws. For some reason I prefer it over ROM Manager. Maybe it's because I'm getting tired of looking at ROM Manager's orange text.

I just want to make sure I'm not in jeopardy of bricking my Xoom for the sake of aesthetics.

By recovery, I am guessing you mean app-that-tells-what-recovery-should-do

Well, I have never gotten GooManager to flash things for me personally, but I definitely stay away from ROM Manager. As good of a software it is, in my opinion, it just isn't recommended on the xoom because there are other non-official CWM recoveries that work better for the xoom anyways.

While Goo is still in beta, it may be just best to stick to manual flashing. It can be tedious with many zips (I flash 3 things - ROM->GAPPS->MotoWeatherClockWidget), but it is the best way of making sure you are flashing what you want, and that it gets flashed properly.

Hope that helps...
