I wanted to buy this phone but the global version is not dual-sim so I'm thinking of importing the CN version instead and install google apps on it. will I be able to change the default xiao ai assistant to google assistant? or use all the banking apps for payment using nfc? i don't wanna unlock the bootloader coz I don't wanna lose some phone capabilities.

You don't say what country you're from, no band 20, I unlocked my Chinese version to install EU ROM, everything works although it did with Chinese ROM, just install play store APK. The framework work is already installed. Google apps all working fine including gpay.

I'm from New Zealand and 5G will work here without a problem with network band.

Thanks for the info.

I'm in two minds if I should buy this version.
But I do know I won't be paying the 999 euros for it.

And the other problem is that google are locking down on google store on phones with a unlocked bootloader.
And the pull down menu and other things in the menus are in Chinese.

safetynet only affects unlocked bootloader. i didn't say i'm going to flash roms. just installing google apps.
If you are going to install only gApps with the installer, well you will be able to use all the google apps. But you have to know that google pay may not work in the right way due to the new Google policy. The same as Huawei phones. And well, you won't have 4G B20 band.

I was thinking about doing this.
That was until I saw that all the top pull down menus are in chinese and you can't change them.
And loads of chinese notification popping up.

I don't have Chinese in any of my pulldown menus or notifications. Google apps, safeynet, widevine 3, etc. all work out of the box, even on the Chinese rom. However, I did replace the launcher with Nova and disabled a bunch of Xiaomi apps with XiaomiADBFastbootTools.

Now, all that said, I haven't been able to get "Ok Google" to work for me. The assistant itself seems to work and I can prompt it with a key command, but it gives me a regional error if I try to have "Ok Google" always on. Maybe it works outside of China, but it seems to be a problem with rom itself.

I also have my international payment methods binded to it no problem (safety net works) but since I'm in China I can't really test it out anywhere. It works online, but I would want to see a physical NFC transaction go through before I declare it working.

You don't use the installer anymore, just install it the play store APK, that's it

I can confidently tell you that my CN Xiaomi Mi 10 Pro works flawlessly with the Global ROM installed, and all Google Services working including Google Assistant, Google Pay, etc.
The trick I found to get the phone to pass Safety Net was switching the device fingerprint. After that Google Pay works perfectly as I just tested it at the store. Prior to updating the device fingerprint, that was the ONLY thing that didn't work.

I bought the CN model for use in Australia and can confirm that everything works using the custom from from xiaomi.eu
Without the rom it's impossible to rid yourself of all the Chinese in the OS. With it, you get better updates than the global version and safety-net passes.
