I have the Xperia Z5 dual E6683 running on android version 6.0.1 and I was wondering if this would be compatible? Also what does "dsds" mean?
Yes of course it is compatible !!
this firmware is particularly for your Z5 model E6683, and which version of Android you are currently running has nothing to do with FTF flashing.
DSDS stands for dual sim dual standby , its a variant marker used by Sony.

Just download the flashtool (google it) and flash the FTF first then the kernel .
before that keep backup of your staffs .

I don't have any personal files on my phone since I just got it, should I still make a backup? And if so, how?

no need to backup then ..............
and for backing up you need to have TWRP .............

for that please do some googling in general ...........
get a overall idea and then get back here in XDA and I think you will fit in just fine ............ we can then help you out with the specifics I think :)

If I use the XperiFirm software, do I need to do anything special or just download from there and flash from there?

Will my phone be rooted if I use the XperiFirm?
