I've been a little busy lately, but as I said here is the promised report on the script:

Aroma installer
  • "Magazines" in Aroma should be "My Magazine"
  • Unesesarry linking options for apps. The most notable one being Action Memo and SNote. For example I want to keep Action Memo, but not SNote, they are two completely different features in the phone.
  • Two Sync options in Aroma, not sure what the second one stands for but it's kinda confusing
  • The menus seem kinda sketchy. I would suggest the following categories: Samsung Apps (merging the third and first screen), Third Party Apps (Evernote, Dropbox and other apps installed as System but not developed by Samsung), Google Apps, Widgets, Extra (maybe separate more options here, like the Sync and the Ant+ radios for example. e.g. stuff that are not actually apps that you can launch, but are present in the framework)

Missed stuff
Samsung apps
S Browser
Voice Recorder
KNOX (as already noted, do note that there are a lot of different branches scattered around the phone. They were described somewhere on XDA as far as I can remember)
Downloads app

Google apps
Google Search
Voice Search

Widgets
Active apps manager
Adapt Sound, Alarm
Google Now and Google Search (Google Widgets was actually present and Aroma and I selected it, but those widgets remained uninstalled)
Picture Frame
Google Play Music widgets (removed Google Music apps)
User Manual

Extra
Looking through the system/apps folder there are some bugs (for example exchange services didn't actually get removed, .odexed files are still present) and missed stuff. I will send you on a PM my personal list of apps that I remove, but do note that I am no developer. I don't remove /lib/ files and can't provide you with an 100% accurate list. But I read that you don't actually own the device so I can just "point you in the right direction" so to say. I am sure that there are some peeps around the forum who can help you compile some extra stuff that I'm missing.

That's about it. I hope you realize this is all constructive criticism because I love your script! Thank you for the awesome work, we needed something like this.

This script still dont have odex support but i will add all! :)

Another suggestion:
Clean unneccessary language files in system/vodb and system/sipdb.
A few checkboxes for “keep the following languages“.
I already added it to my script.
If you decide to add this feature, i could give it to you.
Saves you some time to type those lines manually.

This script doesnt touch data/app as of yet thats y gapps didnt uninstall(after update it goes to data/app or omega must have them in data/app by default)
Fixed Voice recorder ..
And didnt remove Wallpaper picker purposely but ill add that as well
and others too!
