When using Blackrose S-Off to repartition flash, I found that my CM7.2 installation would not take the gapps-gb-20110828-signed.zip unless I allocated at least 30mb to the cache partition.
Update:
Using a 20mb or less cache partition, and 'rigging' the installation, the longest run was two hours before a force close. Using the 30mb cache, I have been running play store without a fc for three days.
