I have note 3 verizon with hyperdrive rom installed and have twrp recovery installed im wanting to try another custom rom when i got this note 3 it had hyperdrive installed was wondering if i could wipe the stuff and install a new rom would it brick the device im new to the note 3.

All you need to do is download the ROM you want and the corresponding gapps package and put them on the phone. In TWRP do an "advanced wipe" and wipe the following:
cache
dalvik
data
system
Flash ROM, flash gapps, done!
cache
dalvik
data
system
Flash ROM, flash gapps, done!
