I have a 2020 Moto G Power that I was able to load unofficial LineageOS 17.1 on . Does being "Unofficial" bring with it any caveats? SHould I not trust using it as my everyday smartphone for email, other personal apps?

Using a custom rom especially an unofficial version, may add to the possibility of your data being compromised.
99% of the devs on XDA are not trying to steal you data.
You just need to make your own judgement on whether it's worth the risks.
No mobile software is 100% secure, not even iOS.
