Can I get Wi-Fi Calling on an unlocked Note8 bought from the official Samsung website? Don't want to get the T-Mobile variant because of the bloatware and boot up animations. I also don't like the T-Mobile status bar data icons.

Assuming you have an N950U yes, just download the T-Mobile version firmware and flash that. It will include those things you don't want, however.
The only other way to get their wifi calling would be to root and flash the full CSC + any missing apps/libraries/etc

I could flash back to the original firmware any time right? Also, how do I flash any firmware to an Android?

I have unlocked n8 from Samsung usa. I put t-mobile SIM. Volte and WiFi calling work right out of the box.
