Actually, what LineageOS did is changed their signature keys from "Android userdebug" which is used on most signed zips today, to their own signature keys. Dirty Unicorns have done that on their official builds.

Is it necessary to flash experimental build before flash nightly build from unofficial lineage to official?

That doesn't matter for me in my opinion, I prefer supersu over cm root, because many apps still require supersu to be functioning. For example folder mount, flashfire, etc.

I just flashed SuperSU
When my phone booted its showing that there's a new update, its the same version of the ROM I am using, is this because of SuperSU?

Did you clean flash? If so, there's should be no trace of previous rom right?
Or if you use experimental rom to migrate data, try to remove supersu, then flash the new rom again. Check your rom version. You can flash supersu after that.

FYI: FlashFire works also with in-built SU, but requires permissive SELinux.
