Yes this should be fine.
If you haven't already done it, I would advise to backup your /persist partition just in case.

Yes, going from beta to stable always result in data wipe to prevent regressions due to incompatibility.
As a sidenote if I were you I would stay on beta, APKs seems to be mostly the same as OB1/OB2 ones.

You should take a look back at timestamps: "stable" has a compilation time of 2009301818 while OB2 has one of 2009181221 and stable can't be flashed from OB2 without factory reset as per screenshot in post 106.

Edit: Also, I'm on global ob3 rom. This will be the correct stable rom for global?

Edit 2:. Looks like Local Upgrade option will wipe data. That means I'd lose root. I guess I'll wait for the stable update to hit Oxygen Updater. That won't wipe data, right? Anyone?
