Can someone extract boot. images from these packages?
You can do that using payload dumper, I use https://androidfilehost.com/?fid=818070582850510260 on my windows machine.
The OnePlus Nord N100 doesn't have an Indian build of OxygenOS (it only has global and EU which are present in OP), you must be confused.

Open spoilers in the original post, you will find latest build in there. Do however mind that if you're currently on latest global (11.0.2) you will not be able to flash latest EU (11.0.1), as it has been compiled before global build (210804 vs 210819).

You can't downgrade from 11 to 10. It doesn't let you, and yes 11 can be rooted but you will need to extract the boot.img from the payload file, patch it on your phone with magisk then flash it on your phone from your computer

9As OnePlus doesn't always provide download links for all of their OxygenOS ROMs & OTA update zips, we've created an index to put the links in one post so that they're easy to find.
Note: This is not a support thread for issues you may have with OxygenOS ROMs. If you need help installing or updating, feel free to ask here. If you have any other issues, please ask in another thread.
For the sake of simplicity, only signed flashable (full) zips are listed. These are recovery flashable zips of the full ROM that won't overwrite your data partition unless mentioned otherwise. They can be flashed via local update in Settings --> System --> System Updates or TWRP recovery.
Packages with build tag BE81AA are intended for the following variant:
BE2011: Global
Packages with build tag BE83BA are intended for the following variant:
BE2013: Europe
Units with model numbers BE2012 (T-Mobile) and BE2015 (Metro by T-Mobile) are running a special version of the OS which lacks local update and therefore cannot install updates manually. Sideloading the system update APK and trying anyway would not work as the device name for these units is different.

Stock ROMs in this thread are solely intended for the Nord N100. It is unlikely there will be a similar thread for the Nord N300 due to the use of Google OTA system (full zips are rarely delivered) and to OnePlus not willing to list software builds on their support website anymore. Not to mention the Nord N300 is only sold by US carriers.
