On betas google pay (and maybe other payment apps) doesnt work. Because the device is not playstore certified during beta time. However you can use Samsung pay.
Yes s20 beta are certified as well this year. They pass safetynet so Google Pay should work.Well Pixels were certified from some beta onwards and Google pay normally worked (my own experience). I've read that S21 was also certified from some beta hence my question
The only reason I can think this wold happen is because you are flashing an update with a different cscEvery time I update from SD card it completely wipes my phone every time. Is there a way around this?

Snapdragon S20 Ultra unlocked are not certified and does not pass safetynet. Are you sure it's certified? You can check in Google Play store by going to the about section in the settings.
