Update:

After checking with my friend's galaxy s7 edge, it appears that apps edge update problem is existent. And also existent with other galaxy s7 edge users hence, this problem is not related to problems caused by updating firmware without re-enabling apps. No problems encountered so far as of the moment. Though I still would like to know what problems should I be expecting.

I've been using Package Disabler Pro since I got my S7 Edge...

Battery life was terrible in the beginning and then I kept fine tuning and fine tuning and fine tuning until I eventually reached some good battery life but it wasn't consistent.

Then I tried the GearVR and it installed some more apps and battery life started to suffer again.

I wasn't sure what the issue was exactly so I kept fine tuning and adjusting. I read online that Package Disabler Pro can actually impact battery life if you disable too many apps.

So I went back and only disabled a minimal number of apps... Still battery life was back and forth... Some days okay but other days battery drain would be awful.

So just for fun, I uninstalled Package Disabler Pro and manually went through and disabled each Application/Permissions through the Application Manager one by one (System & User Apps).

Now my battery life is phenomenal!

Seriously, I am getting about a day and a half off one charge (almost two days) and a SoT of between 6-8 hours consistently <- obviously this depends on how heavy your usage is.

I just charged my phone today with 5 1/2 SoT @ 25% battery left and 1 day 12 hours since last charge.

Very excellent results... So if others out there are having issues, try uninstalling Package Disabler Pro and doing it manually. Sure it takes time but the results have been amazing for me.

I also did this, pdp seems to have every single possible permission as admin, is this really necessary? Seems dangerous... I'm using this pdp

EDIT:
I uninstalled this PDP and found this other app https://play.google.com/store/apps/details?id=com.hecorat.packagedisabler
The one from Hecorat only has ONE admin access, that is to enable/disable/install/uninstall apps.
Unlike these other "Package Disabler" around that has every possible permission.
It is a security risk, IT IS NOT SAFE, I recomend to uninstall it, maybe do a factory reset after that.

What is the problem with allowing the phone to update the firmware with packages disabled? My phone updated to PK2 (Nov. security update) with a ton of disabled apps (EZ Disabler) and my phone has been running perfectly all day. Am I to expect some issues down the road?

Interesting that you bring this up. I updated to PK1 and now AT&T Software Update no longer shows up in EZ Disabler or Package Disabler Pro, so I can't disable it. I'm concerned that it might automatically update now with apps disabled. In the past when I had rooted phones, updating the software with apps frozen would cause them to be stuck in their frozen state. Like, you would open the app used to freeze them and they would no longer be there or in the app drawer. I had to reflash the software to fix it. Not sure about updating the software with disabled apps though. I export the list before an update and then enable all of them. After it's done I disable them again. That's when I was able to control the updates though. Now I can't.

Many of the apps it disables can not be disabled in the settings.

Works good

Ive been using this on my s7 att for about a year, only time i had issues was when i went rogue and disabled items experimenting. Normally system works great and app.

For those of us that don't want to root....Post up your success (or failures) with using PDP!!

I personally haven't done anything with it yet but it was helpful with my S6 Active. Hoping for someone a bit more gutsy than myself to see what is ok to disable and what we shouldn't touch.

Still working great on my S7. I actually tried to refer someone to this app today but I think it fell on deaf ears. Or he had me on ignore lol
