Possible to install a customer ROM and keep unrooted?

Im really to the point where i cannot take MIUI anymore. I'd really love to put on a custom ROM but am worried some of my apps would stop working, mostly the banking ones. I know the Barclays Bank app is very picky about root, along with some other banking apps.

Just wondering if its possible to install a custom room and keep my phone without root/locked bootloader (maybe?). Also wondering if there are any ROMS out there that offer OTA updates?

You could unroot after flashing the rom.
