You cant video gtalk with any phone cause there's no gtalk for phone that support video chat.

For that I suggest you use Tango.

It piss me off that Google didn't go to trouble itself to port the gtalk in Honeycomb to Gingerbread or any other device, really.

Gtalk on the Xoom is pretty much useless until Google comes out with Talk with video for Android phones. Google seems to have so many projects going at once that they are falling short on some of them.

I/O is just around the corner...literally 18 days.
Google is a company who really likes to surprise.

My wife is going to China for 1 week on the last day of this month with her Xoom.
It would have been great to have Gtalk video on my EVO during her trip. Even a Beta would be great. Oh, well.

right now you can only video chat with computers equipped with a web cam. As some of the other members mentioned, Google I/O is on the horizon. I am certain we will be fed with wondrous stories of Honeycomb/Ice cream updates, new software, and upcoming projects.
